Vocational Skills Trainer – Pastry and Sweets Making At Aid Gate Organization

Background

As part of its vocational training efforts to improve the inclusion of persons with disabilities (PWDs) in the local economy, AGO will implement a 40-day course in Pastry and Sweets Making in Raqqa and Kasra. Based on the gender and disability-sensitive market assessment conducted , this profession was identified as a suitable and high-potential field for home-based businesses and small enterprises, especially among women and youth with disabilities.

The training will blend theoretical instruction with hands-on practice to ensure that participants not only learn how to prepare a variety of sweets and pastries but also how to package, present, and potentially market their products to local consumers.

Objectives of the Training

  1. Provide participants with foundational culinary knowledge in pastry and sweets preparation.
  2. Teach hygienic practices, ingredient handling, and basic food safety principles.
  3. Enable hands-on experience in preparing a range of traditional and modern desserts.
  4. Encourage participants to consider self-employment opportunities through home production or market sales.
  5. Foster independence and creative expression through culinary skills.

Training Methodology

  • Theoretical Sessions: Covering food hygiene, ingredients, measurements, local dessert preferences, and cost estimation.
  • Practical Sessions: Participants will prepare pastries, cakes, biscuits, and regional sweets, including decoration and presentation techniques.
  • Inclusive Training Environment: Kitchen tools adapted for persons with physical or sensory disabilities; clear instructions with visual aids and step-by-step guidance.
  • Trainer Orientation: Trainers will be introduced to inclusive teaching practices to address varied participant needs.

Expected Outcomes

By the end of the training, participants are expected to:

  • Prepare a variety of pastries and sweets suitable for family or commercial consumption.
  • Apply proper food handling and kitchen hygiene practices.
  • Understand cost calculation, pricing, and basic budgeting for small-scale production.
  • Explore the possibility of income generation through catering, orders, or market stalls.
  • Demonstrate confidence in working with others in a shared kitchen environment.

Target Group

  • Persons with disabilities (PWDs) in Raqqa and Al-Kasra, from displaced, returnee, and host communities.
  • Priority for participants interested in starting home-based businesses or working in bakeries/confectioneries.

Trainers’ Responsibilities

  • Deliver both theory and practice-oriented sessions on pastry and sweets making.
  • Ensure training content is accessible and inclusive.
  • Monitor each participant’s progress and adjust support as needed.
  • Supervise practical sessions and ensure safety and hygiene.
  • Submit daily reports, attendance, and feedback summaries.

AGO Responsibilities

  • Provide ingredients, tools, and kitchen supplies required for the sessions.
  • Ensure an accessible and safe training environment.
  • Monitor trainer performance and training effectiveness.
  • Provide transportation/logistics as needed.
  • Offer follow-up support post-training for business linkage and market access.

Follow-up Mechanism

  • Pre/Post Assessment: To measure knowledge and skill acquisition.
  • Attendance Tracking: To ensure full participation.
  • Participant Feedback Forms: To improve training quality and relevance.
  • Post-Training Support: Explore options for business startup support (grants, toolkits, referrals, or mentorship).
